We stayed in 2 bedroom apartment style hotel with kitchen. It was very convenient to use kitchen. This hotel is 3 min from center and beaches by car, so it's better to have your own car. The location across the street from the excellent beaches and the hotel was very nice, and cozy. It was quiet and the staff helpful and friendly. The only drawback was the shower faucets needed to be replaced. All in all, we loved it.

I can recomment to visit some of the beaches around Las Terrenas and rent a motorbike for a visit to El Limon waterfall which can be reached guided on horseback or by foot from several posts.
Las Terrenas is a nice alternative to the All Inclusive type resorts commonly found in DR. It's quite layed back style and proximity to nature are its big draws for me.
